  1. First, let me say it is a delight to read your musings.Obviously there lurks a poet in your soul. Secondly please keep thinking and doing outside the box. I am an intermediate on the cooking scene, know some stuff, and was delighted to read your new (to me) approach to grilling steaks. The part about letting the steak rest after first cooking it to one temp below desired doneness. Now, my possibly naive question. After the rest do you grill the steak on both sides again (as in the first stage) or just on one side till it reaches the doneness you want? Cheers, Karl
